Local pharmacy professor publishes book on research evidences behind the benefits of drinking coffee

South University School of Pharmacy Assistant Professor Rosanne Santos, Ph.D., published a book with coauthor Darcy Lima, M.D., Ph.D., debunking the myths that have given coffee a bad reputation. In An Unashamed Defense of Coffee: 101 Reasons to Drink Coffee Without Guilt, the authors organize mounds of scientific evidence for the average coffee drinker to enjoy.
To celebrate Dr. Santos’s accomplishment, South University will host a book signing and coffee tasting event on Thursday, November 5th from 11:00 a.m. to 1:00 p.m. at the university campus on Mall Boulevard. The event is open to the public at no charge. Dr. Santos’s Project Coffee and Health research students will be brewing and pouring coffee, and Dr. Santos will be answering questions about her favorite subject: roasting coffee.
“One of the keys to gaining the most health benefits from coffee is achieving optimal roasting,” says Roseane Santos, Ph.D. “The lactones, which are beneficial to human health, are not stable and heat can both release and damage them. So learning a few things about the roasting process and optimal roasting can really make a difference in how much you may benefit from your morning cup of Joe.”
